Dassai

History

During Kan'ei Period (1624-1645), brewery licenses were issued by the Mori Domain (region of Chugoku during Tokugawa regime), thus created the origin of Asahi Brewery. The brewery ownership was later given to Sakurai family, renaming it "Sakurai Brewery"; however, the Pacific War put the business into hiatus for a period. The brand name was later changed into "Dassai" in 1989, marking the beginning of a journey with innovation and creativity and continuing such efforts till this day.

Located in a small village with approximately 200 residents in total population, numerous individuals, including food experts, from different nations would travel to visit the brewery or research about sake.
A simple, yet ambitious goal, the word "delicious!" expressed by customers takes up a greater role in Dassai sakes.
Selecting the best Yamada Nishiki rice and polishing down to 45% or below, the Dassai Junmai Daiginjos are crafted with excellence.
