Jozan

History

With a history of over 400 years, the Tokoyama Family had actually begun their sake brewing journey since 200 years ago during Edo Period, thus, it is considered the oldest brewery among Fukui Prefecture.

Fukui Prefecture is often described with a Japanese term "Eichizan Jakusui (越山若水)" by reflecting the lucious green mountains from Eichizen (North of Fukui and closed to Tsuruga City) and clear, beautiful water from Wakasa (Southwest of Fukui). The area is blessed with an abundance of natural resources from its forests and the Sea of Japan.
The motto of "Brewed in Harmony", is to follow a path through harmony with nature, tradition, business partners, locals and customers.
Most of the rice types used in Jozan sakes are cultivated in Miyama, northern area of Fukui Prefecture, crafted with rich mineral underground water from Mount Haku. The sake is following the traditional style of "Echizen Karakuchi (越前辛口)", which referes to "light and umami".
