Niwa no Uguisu

History

Originally a second-hand shop, the Yamaguchi Family was able to acquire brewing license, changing their business into brewery in 1823. One day, the 5th president of the brewery was resting in the garden and discovered a nightingale (Uguisu / うぐいす in Japanese language) drinking water and bathing in the pool. This magnificent bird was thought to be the "messager of God" from the local temple, leading him to name its sake brand "Niwa no Uguisu" to honour the God's will.

The brewery is located in the Kurumi City of Fukuoka Prefecture
Mr. Tetsuo Yamaguchi, the 11th president of Yamaguchi Brewery, wishes to fulfill the duties passed down by his predecessors, and embarks the journey to introducing sakes in the world. The brewery would search for new perception about Japnese sakes to bring new potentials in modern cuisines.
With the help of Yeast No. 9 and original brewery yeast, Niwa no Uguisu sakes are often described as floral and fruity aroma with a well-balanced taste in umami and acidity.
