Gikyo

History

Yamachu Honke Brewery was founded in between 1789 and 1801. During the Meiji Period, inflation of sake price occurred and caused numerous businesses to pay higher cost in operation. Yamachu Honke, on the other hand, maintained the original price they usually sold to customers. This act of generosity was considered honourable and heroic, thus nicknamed the brewery "Gikyo /義俠", which can be roughly translated as "justice and helping the weak" in Japanese.

Located in Aisai City, the west side of Nagoya, Aichi Prefecture
For Yamachu Honke, to make good sakes is to give thanks to the farmers for granting their precious rice, and perfect its creation through maximizing the potential of the ingredients.
Specialize in maturation, Gikyo sakes often results with more umami characters with relatively rich and round flavours. The brewery production consists of 80% of Yamada Nishiki rice from Hyogo Prefecture, with another 20% using Gohyakumangoku. In classification, only "Junmai" and "Junmai Ginjo" are displayed in the labels, as the brewers wish to express the beauty of their sakes can be as excellent as "Junmai Daiginjo".
