Kaze no mori

History

In the past, the company used to operate as "Chobei Oil Refinery" in converting vegetal materials into oil, and later changed into "Yucho Brewery" and began its sake brewing journey in 1719. As a brewery in Nara Prefecture, 75% of the production focuses on sake rice cultivated in Nara Prefecture,  with "Akitsuho / 秋津穗" as its signature.

The brewery is located in Gose City of Nara Prefecture
Being an innovative sake brewery would also mean to preserve and express the identity of Nara sakes. This motivation would keep Yucho Brewery to continue in exploring the potential of Japanese sake.
To show the freshest characters of their sake, most of the products are not processed in charcoal filtration, dilution and pasteurization, as well as trapping the carbon dioxide from the fermentation. Each bottle of sake is filled with layers of flavours and light fizziness, a characteristic which the brewery wish to express to its customers.
